They’re often labeled as fideo noodles or fideo cut spaghetti at the grocery store, but angel hair pasta broken into 1-inch pieces will work in a pinch!

How to Make Sopa de Fideo

For this recipe, you’ll need:

2 tablespoons neutral oil of choice

½ medium red onion, diced

3 garlic cloves, minced

1 cup diced zucchini

7 ounces dry fideo pasta

5 cups vegetable broth

½ tablespoon ground cumin

2 Roma tomatoes, diced

8 ounces tomato sauce

Salt and black pepper, to taste

Instructions

  1. Heat the oil in a medium pot over medium-high heat.
  2. Add the onion and garlic. Sauté for 1 minute or until slightly softened and fragrant.
  3. Add the zucchini and fideo noodles to the pot. Sauté for 1-2 minutes or until the noodles are lightly toasted.

Crème Brûlée – Three Ways

Whether you love a classic, like a bit of ginger in your dessert, or want to keep the romance alive with chocolate, we got you covered. To make this simple, elegant dessert, you’ll need:

1 vanilla bean, or 1 teaspoon pure vanilla extract

1 ¾ cups heavy cream

½ cup whole milk

4 large egg yolks, cold

½ cup plus 4 teaspoons granulated sugar

1/8 teaspoon sea salt

4 (8-ounce) ramekins

Optional add-ins include:

2 tablespoons grated ginger root

1 ½ teaspoon cocoa powder

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit and have a roasting pan with high sides at the ready.
  2. Split the vanilla bean, if using, and scrape the seeds out with the help of a sharp knife.
  3. Add the seeds, or vanilla extract, to a small saucepan with the heavy cream and milk. If making ginger crème brûlée, add it to the saucepan as well. Bring the milk and cream to a boil.
  4. Whisk the eggs, half a cup of sugar, and salt together in a mixing bowluntil foamy. If making chocolate crème brûlée, add cocoa powder during this step.
  5. Stream the milk and cream mixture into the egg mixture as you continuously whisk until smooth.
  6. Strain the custard into a large measuring cup (preferably one with a spout) to remove any solids.
  7. Divide the custard between four ramekins. Transfer them to the roasting pan, then fill the pan with an inch of water. Be sure to pour the water around the ramekins.
  8. Bake for 35 minutes or until the edges are set, but the desserts jiggle a bit in the center.
  9. Remove from the oven and cool at room temperature. Once cooled, cover each crème brûlée with plastic wrap and refrigerate for at least 3 hours.
  10. Sprinkle a teaspoon of sugar over each custard and caramelize to create crème brûlée’s signature crackly top. To caramelize, either impress your date with your mini blowtorch skills or place under your oven’s broiler until the sugar browns.

  • You can make crème brûlée up to 2 days in advance. Just bake, chill, cover with plastic, and store in the refrigerator until it’s time for dessert.

Fennel and zucchini soup is an easy beginner recipe that yields a restaurant-quality result. Both are at their best this time of year. Fennel boasts a crisp bulb, herby stalks, and bright, vegetal fronds that serve as the perfect garnish. Its mellow anise-like flavor melds beautifully with zucchini’s mild, bitter-sweet taste. In this easy recipe, the bulbs are boiled, so they take on a silky-smooth texture, as does the zucchini. Onion, garlic, and celery add another layer of flavor, while fresh lime juice brings brightness to every spoonful.

How to Make Fennel and Zucchini Soup

To make the soup, you need:

1 large fennel bulb, cleaned

2 limes

1 teaspoon fine sea salt, divided

2 tablespoons olive oil, plus more for drizzling

4 medium-sized zucchini, halved lengthwise and cut into ¼-inch-thick slices

1 yellow onion, chopped

1 rib of celery, chopped

2 garlic cloves, minced

32 ounces chicken or vegetable broth, reduced-sodium

¼ teaspoon freshly cracked black pepper, or to taste

½ cup crème fraîche

Crispy chickpeas, optional garnish

Instructions

  1. Remove the fronds and stems from the fennel—cut close to where the stems connect to the bulb. Set the fronds aside for garnish.
  2. Thinly slice the bulb and transfer it to a medium saucepan. Juice the limes, set the juice aside, and add two of the juiced lime halves to the saucepan with the fennel. Sprinkle in half the salt.
  3. Bring to a boil, reduce to a simmer, cover, and simmer for 20 minutes or until the fennel is tender enough to pierce with a paring knife.
  4. Drain and set the cooked fennel aside. Dispose of the lime halves.
  5. Heat the olive oil in a large pot.
  6. Add the zucchini, onion, celery, and garlic. Season with salt and sauté for 10 minutes or until softened.
  7. Transfer the cooked fennel to the pot, then pour in the broth.
  8. Stir, bring to a boil, reduce to a simmer, partially cover, and simmer for 10 minutes.
  9. Working in batches, blend the soup until smooth. To make this easy recipe even easier, use an immersion blender. If you use a stand blender, remove the lid insert, hold a kitchen towel over the hole as you puree the soup, then return it to the pot. The towel will prevent you from getting splashed with hot soup.
  10. Finish the fennel and zucchini soup with black pepper and lime juice to taste.

Once the soup is ready, it’s time to display it in the best way possible. The soup’s green hue is an eye-catching focal point; therefore, you want to work around that. First, select the bowls. And when it comes to gingerbread biscuits, it’s a three-step process. You only need to prepare the dough, cut out and bake the cookies and then decorate them in the end. Here’s a simple Christmas ginger biscuits recipe for the holiday season 2021.

Recipe # 1

Ingredients

            • All-purpose flour
            • Cloves
            • Water
            • Margarine
            • Salt
            • White sugar
            • Cinnamon
            • Baking soda
            • Ginger
            • Egg

Mixing bowls are available in different sizes so it all depends on how much mixture you have, that is, the number of biscuits you’re planning to bake! Or you can use small bowls for mixing ingredients with lesser quantities separately before adding them to the main dough mixture in a larger bowl.

Before you begin baking the ginger biscuits, you must preheat the oven to 175 degrees Celsius or around 350 degrees F.

Steps

          1. Firstly, take two-quarter cups of flour, 1 teaspoon baking soda, three-quarter ground cinnamon, ½ teaspoon ground cloves, 2 teaspoons ground ginger, and ¼ teaspoon salt. Put all of these into a mixing bowl, sifting them to blend well enough.
          2. Now add 1 cup sugar and three-quarters cups margarine into a big bowl. Mix these together using a large ceramic spoon. It’s best if the margarine is softened, as it would make the process easier, smoother and quicker. Once you get a smooth and soft mixture, put in the egg and use an electric or hand beater accordingly.
          3. Add 1 tablespoon of water and a quarter cup of molasses to the main mixing bowl consisting of margarine, sugar, and egg. You can even tiny fruit bits, such as strawberries but this is completely optional.
          4. Once you have a good dough mixture, add 2 tablespoons of sugar and knead the dough well again.
          5. Make tiny to medium-sized balls out of the dough according to the shape you like and place them on a cookie sheet directly, without applying grease.
          6. Allow around 10 minutes for the biscuits to properly bake. Once you take them out of the oven, don’t remove them immediately. Give them a few minutes to cool down and you can then store the biscuits in an airtight container.

But what stands out is decorating the table in festive spirits, complete with the fancy silverware and serving bowls, fairy lights, and flowers.

Kale and Pickled Cranberry Salad with Crunchy Quinoa

If you’re in search of a refreshing Christmas side dish to cleanse everyone’s palette – you’ve come to the right place. With all the meat and creamy sides on the plate, you need some fresh greens to cut through the richness of the Christmas food.

This salad packs the perfect punch – crispy, sweet, and sour.

Pickled Cranberries

First, you want to prepare the cranberries, all you need are:

½ Cup Apple Cider

½ Cup Sugar

One teaspoon whole cloves

One teaspoon allspice powder

One cinnamon stick

One tablespoon orange peel

1 ½ cup cranberries

Combine vinegar and sugar into a saucepan and slowly reach a boil. Once bubbles form rapidly, add all the spices and orange peel and leave the mixture to simmer for 10 minutes.

Then add the cranberries and leave them to soften or wait until they’re going to start bursting – this usually takes 2-3 minutes. Pour the cranberry mixture into a heatproof jar and let it fully cool before refrigerating.

These cranberries can last up to almost two weeks, but you want to strain out all the spices before using the berries though.

Assembling the Salad

For the actual salad, you can always mix up the veggies and leafy greens according to your taste, but in my personal experience, kale works best.

All you need are:

1 pound kale, roughly chopped

1 Granny Smith apple cubed

2/3 cup roasted pistachios

3 ounces Manchego cheese, finely grated

½ cup Quinoa

½ cup Canola oil

Kosher salt

Ground black pepper

¼ cup lemon juice

Two tablespoon honey

One teaspoon Dijon mustard

One teaspoon olive oil

First, prepare the quinoa by boiling two cups of water and adding it to the water. Cook the grain till it’s soft, which usually takes around 12 minutes. Once that’s done, drain the quinoa and line it on a baking sheet, leaving it to dry.

Add canola oil to a frying pan and add the quinoa into the hot oil, tossing it around till it’s golden and crispy. Take the quinoa out of the pan after 2-3 minutes and leave it to the side.

In a separate bowl, add the honey, mustard, and lemon juice, slowly adding in the olive oil little by little. Add in the salt and pepper as a creamy dressing starts to form.

Broccoli Scalloped Potatoes

Serves 8

Ingredients

¼ cup of butter, cubed
2 tbsp chopped onion
4 garlic cloves, minced
5 tbsp flour
¼ tsp white pepper
1/8 tsp salt
2 ½ cups milk
2 cups shredded cheese
2 pounds potatoes, peeled and thinly sliced
2 cups cooked ham
2 cups of broccoli

Step 1 – Preheat oven to 350 degrees. Take some butter and lightly coat the inside of the ramekin bowls. On a hob, add to a pan the onion and garlic, stirring until tender. Then add in the flour, white pepper and salt until combined. Gradually whisk in the milk. Once everything is combined bring to a boil and constantly stir until thickened.

Step 2 – Once thickened, add a cup of cheese. Reduce the heat and stir until melted, creating a thick sauce. Remove from heat once complete.

Step 3 – Add the potatoes, ham and broccoli into the sauce, stirring gently until everything has been coated with sauce. Evenly distribute into the ramekin bowls.

Step 4 – Bake for 40 minutes, covered. Once cooked, sprinkle the remainder of the cheese and bake uncovered until potatoes crispen and the cheese is melted. Approximately 20 minutes.

Toasted Paprika Chickpeas

Serves 6

Ingredients
1 (15 ounces) can no-salt-added garbanzo beans (chickpeas), drained
4 tsp olive oil
½ tsp paprika
¼ tsp salt
¼ tsp garlic powder
¼ tsp ground cumin
⅛ tsp black pepper
Dash of cayenne pepper

Step 1 – Preheat the oven to 450 degrees F. Pat the chickpeas with a paper towel to remove any excess liquid. Remove the thin skins and place in a bowl. Next drizzle with olive oil and stir until all have been coated. Pour onto a baking tray with baking paper then place in oven for 20 minutes, stirring halfway through.

Step 2 – After 20 minutes, remove from oven and sprinkle the paprika, salt, garlic powder, cumin, black pepper, and cayenne pepper evenly over the chickpeas. Place in oven for 12 minutes until dried and crispy.

*Allow to cool before eating.

Berry Crumble

Serves 6

Ingredients

8 ounces strawberries, halved (or quartered if large)
6 ounces blueberries
6 ounces blackberries
Juice from 1/2 a lemon
Zest from 1/2 a lemon
1/4 cup granulated sugar, divided
1/2 tablespoon cornstarch
1/2 stick of unsalted butter, softened and cut into chunks
1/4 cup all-purpose flour
1/4 cup brown sugar
1/4 cup old-fashioned oats
1/2 teaspoon cinnamon

Step 1 – Preheat the oven to 350 degrees

Step 2 – In a large bowl place the fruit, lemon juice, zest, two tablespoons of granulated sugar and the corn-starch. Set aside.

Step 3 – In a separate bowl, mix the flour, brown sugar, oats, cinnamon and remaining granulated sugar. Once combined, mix the butter in using your hands until the mixture forms a crumble.

Step 4 – Evenly fill each ramekin bowl with the fruit mixture and crumble mixture on top. Bake for 30-35 minutes.

 

Winter

A time where we indulge in the good stuff, our Modern Bohemian collection is the dish for a rich meal or dessert. Recalling patterns on winter socks and Christmas jumpers, a Christmas-inspired recipe is perfect for this bowl.

Berry Crumble

Serves 8

Ingredients

50g unsalted butter
135g caster sugar
210g dark chocolate (at least 70%)
2 tsp ground ginger
2 tsp dark rum
Vanilla extract (added amount depends on preference)
5 eggs, separated
Vanilla custard

Step 1 – Preheat the oven to 180ºC/350ºF/Gas Mark 4.

Step 2 – Melt half of the butter and use to brush a coat on the inside of the eight ramekins.

Step 3 – Using 25g of sugar, pour the contents into a ramekin bowl. Gently move the sugar around the bowl until it’s covered in a light coat. Pour the excess sugar into the next ramekin bowl and repeat until all eight bowls are butter-and-sugar-coated.

Step 4 – Place the chocolate, ginger, rum, vanilla extract and the remaining butter into a bowl. Place over a pan containing hot water on the hob. The bowl should not touch the hot water. Stir until melted and smooth.

Step 5 – Take the bowl away from the heat and stir in the egg yolks, one at a time.

Step 6 – Separately, whisk the egg whites until stiff peaks are produced. Slowly add the whisked whites into the chocolate mixture until all is combined.

Step 7 – Disperse the soufflé mixture evenly across the eight bowls and bake for 11 minutes. Once baked, pour the custard (warm or cold) into the center of each soufflé.

*Don’t bake until the last possible minute or they will collapse. Resist opening and checking on them whilst in the oven.
